  1. Freezing and vacuum packing local foods at community kitchens and putting the ingredients together in another see thru bag with a card stock label inside is a 21st century idea that could add to the farm sustainability picture. Who would be interested in learning? I want to train folks to do this NECFE approved process in community kitchens at churches, Ag. & Mkts. inspected kitchens, even school kitchens that are only used 180 days per year. 1. I have been discussing this very thing with my local sanitarian. My farm kitchen can be issued a food establishment permit; I just need to apply. I have been considering things such as chopped or sliced peppers, fire roasted peppers, tomato products, etc.

      1. Peggy,
Where are you located? I am in NY state. Here we can create Freezer Meal Kits from individually frozen vegetables, fruits, sauces, cooked beans and whole grains that are healthier than store brands. How might I help you?

    2. Hello Anna Dawson,
I’m very interested in learning this technique.
I hope it’s not too late.
I’m a recent high school graduate from Ghana, West Africa. I’m currently founding an agribusiness start up and need all the help I can get.
